Lottie’s Fish Chowder
¼ cup margarine
½ cup chopped onion
1 cup thin sliced carrots
1 cup water
1 ½ tsp. salt
1/8 tsp. pepper
3 cups milk
2 T flour
½ tsp. Old Bay seafood seasoning
1 cup diced, cooked potatoes
1 cup cooked, flaked fish
1 T parsley
Melt margarine in large pot. Add onions and carrots and sauté
until onion is tender. Add water, salt and pepper. Cover and simmer
until vegetables are tender. Combine ½ cup milk, flour and seasoning. Stir
in remaining milk. Add vegetables. Cook stirring constantly until slightly
thickened. Add potatoes and fish. Heat to serving temperature. Sprinkle
with parsley. For Manhattan style chowder, add 1 cup canned tomatoes
or tomato juice. Reheat and serve.
