Green Pea Soup
2 T chopped onion
1 T margarine
4 cups frozen peas (20 oz. bag)
6 cups chicken broth
½ tsp sugar
4 T flour
Sauté onion in margarine. Cook peas and sugar in 1 cup of
broth for 5 minutes in a 3 quart pot. Cool a little. Puree peas,
adding flour in food processor. Return to pot. Heat remaining broth,
gradually stirring it into pea mixture. Cook over medium heat, stirring
frequently. 10 servings
