Spinach Pancakes
2 pkgs. chopped frozen spinach
½ cup flour
1 clove garlic, minced or juice
1 onion minced
2 eggs
½ cup Swiss cheese, grated
½ tsp. baking powder
salt, pepper, nutmeg
oil
Cook spinach as directed. Drain and squeeze out all water. Mix
all ingredients except oil. Fry in hot oil over high heat until crisp. Can
also make small as hors d’ouvres.
