Kasha Varnitchkes
1 cup coarse or medium buckwheat groats
2 egg yolks
4 cups boiling water
1 small onion, diced and sautéed in schmaltz
1 tsp. salt
½ tsp. pepper
4 T schmaltz or butter
1 cup cooked bow-tie noodles
Brown the groats in a frying pan, stirring constantly. Stir in the
egg yolks until grains are evenly coated. Add the hot water slowly, stirring. Add
salt and cook until tender over low heat. Add the schmaltz or butter
and the cooked noodles and onions. Place in casserole and heat in oven.
You may brown it under the broiler if you like. Serve as is or with
gravy. Serves 4
