Emma’s Noodle Pudding
1 box medium broad noodles
2 eggs
about ½ pt. cottage cheese
butter
salt
plumped raisins (optional)
sugar (optional)
Boil noodles in salted water until tender. Pour cold water over noodles
in colander and drain well. Melt butter and add to noodles. Beat
up eggs with salt and mix thoroughly with noodles. Rice the cheese;
if it is very moist, drain liquid and add cheese to mixture. Place in
buttered baking dish in 350º oven. Bake approx. 1 hour or until
set. If you desire a sweeter pudding, cut down on salt and add sugar
to taste, also raisins plumped in hot water. You can also add diced,
peeled apples, nuts and cinnamon.
