My father-in law’s name was Lester and the grandkids called him Pop-Pop. Pop-Pop
loved egg dishes and Chinese food. He didn’t like many vegetables however,
so in order to get him to eat some, Bubbe Lottie invented this dish especially
for him.
Egg Foo Lester
4 eggs, beaten
1 tsp. salt
½ can bean sprouts, drained
3 scallions, chopped
1 small stalk of celery chopped very small
½ cup of cooked chicken, minced
pepper
oil
Stir-fry vegetables in oil until transparent. Combine with eggs, salt,
pepper and chicken. Heat more oil in pan and using a large spoon, make
pancake size omelets, frying them one at a time until brown on both sides.
Heat about ½ cup of water in a pan and whisk in some flour until it
thickens. Slowly dilute with soy sauce, until it reaches the consistency
of gravy. Pour over eggs. Serves 2
