Carrot Ring
¼ cup schmaltz
2 eggs, separated
2 cups carrots, grated
½ tsp. salt
½ cup brown sugar
1 cup flour
1 tsp. lemon juice
1 T water
Beat egg yolks. Mix water and lemon juice. Combine all ingredients
except egg whites. Beat them until stiff. Fold into mixture. Bake
in greased ring mold for 45 minutes at 375º. Unmold and fill center
with warmed peas. Serves 6
