Bubbe Lottie’s Mock Kishke (Stuffed Derma)
1 box plain Tam Tam crackers
1 stalk of celery
¼ lb. of pareve margarine
1 medium carrot
¼ tsp. salt
¼ tsp. pepper
1 large onion
Grind crackers and vegetables in a grinder or grate finely. Mix with
margarine and seasonings. Divide mixture in half and form into two long
rolls about 1 ½ inches in diameter. Encase each roll in aluminum
foil. Bake for 1 hour at 350º on a cookie sheet. Open foil during
last 15 minutes to allow the kishke to brown. Slice and serve hot as
a side dish with meat. This freezes well, if you have any left over.
