Bubbe Lottie’s Cholent
2 lbs. chuck or short ribs
2 T schmaltz or nya fat (vegetable equivalent of schmaltz)
l large onion, sliced
1 cup lima beans
1 cup large barley
salt, pepper, paprika
4 cups boiling water
Sear the meat in a heavy pot. Add the onion and stir until browned. Add
other ingredients. Cover tightly and cook at 250º. Serves 6
