Bobbie’s Scrumptious Apricot Kugel
1 lb. dried apricots
12 eggs
1 lb. broad noodles
¾ lb. cream cheese
½ lb. melted butter
2 cups sugar
juice of 1 ½ lemons
cinnamon.
Cook noodles as directed on package and drain. Beat eggs, cream cheese,
butter, sugar and lemon juice. Add noodles and mix well. Pour one-third
into well-buttered 13 x 15 pan. Dot with apricots. Add more batter
and follow with apricots. Put last third of batter in and sprinkle with
cinnamon. Bake 1 hour at 325º
