Roast Chicken
1 4lb. roasting chicken
salt
2 onions, chopped
garlic powder
paprika
The night before cooking, sprinkle the chicken with salt and refrigerate. When
ready to cook, rinse off salt and pat chicken dry with paper towel. Place
in roasting pan and sprinkle with garlic powder and paprika. Place chopped
onions all around. Cover loosely with aluminum foil and roast for 1
hour at 350º. Uncover and baste with juice every 15 minutes until
chicken is brown and tender—about ½ hour. Remove from oven and
let cool. Cut the chicken into approximately 10 pieces. Place on
foil and run under the broiler just until it crisps nicely. Serves 4-5
