Honey Chicken
2 small frying chickens, cut up
2 eggs, beaten
1 cup bread crumbs or matzo meal
1 tsp. salt
½ tsp. pepper
½ cup vegetable oil or schmaltz
1 cup water
¼ cup honey
1 cup orange juice
Rinse off chicken parts and coat with beaten egg. Roll in bread crumbs
or matzo meal, mixed with salt and pepper. Heat oil and brown the chicken
in a frying pan, not crowding the pieces. Place in a roasting pan and
cover with the honey, orange juice and hot water combined. Cover and
bake at 325* for 1 hour. Serves 6-8
