Matzo Meal Pancakes
3 eggs, separated
½ cup cold water or more
1 tsp. salt
1 cup matzo meal
1 T sugar
Combine everything but egg whites and refrigerate about 1 hour. Whip
egg whites until stiff. Fold into batter. Drop from a spoon to
form small pancakes and fry in melted butter until brown on both sides. Makes
about 12
