Matzo Kugel
3 pieces of matzo
6 eggs, beaten
½ cup sugar
½ tsp salt
¼ tsp. cinnamon
½ cup raisins
½ cup almonds, chopped
4 apples, peeled and shredded
¼ tsp. cinnamon
1/T sugar
¼ cup butter or oil
rind of 1 orange, grated
Break matzo into pieces and soak in hot water until soft. Squeeze
out water. Add sugar, salt and ¼ tsp. cinnamon to eggs and beat until
well blended. Stir in matzo and rest of ingredients, except butter or
oil, cinnamon and sugar. Mix well. Pour into well-greased 11/2
quart casserole. Sprinkle with cinnamon and sugar mixed together. Pour
melted butter or oil over the top. Bake at 350º until nicely brown--
about 45 minutes. Serves 8
