Apple Pudding
6 large apples, peeled and grated
8 eggs, separated
½ cup matzo meal
¼ tsp. salt
1 lemon, grated rind and juice
¼ cup shredded cocoanut or almonds
Add beaten egg yolks to grated apples. Stir in matzo meal and salt. Add
rind and juice of lemon. Stir well. Beat egg whites stiff. Add
cocoanut or almonds. Bake in ungreased spring form pan for 30 minutes
at 350º until browned. Serve hot with lemon or orange sauce. Serves
