Sweet and Spicy Short Ribs
3-4 lbs. short ribs
1 cup ketchup
1 cup water
1 T vinegar
1 T Worcestershire sauce
1 T horseradish
1 T sugar
1 T dry mustard
1 tsp. salt
¼ tsp. pepper
1 bay leaf
2 medium onions, sliced
Combine short ribs with all ingredients except onions in large saucepan. Cover
and simmer 2 hrs. or until tender. Cool, then chill until 1 ¼
hours before serving time. Skim off all fat and remove any loose bones
from ribs; remove bay leaf. Place meat in an 8 cup baking dish; pour
the sauce over it; top with onion slices. Cover and bake at 350º
for 30 minutes. Uncover and baste onions with sauce. Bake 30 minutes
longer or until meat is very tender. Serves 4
