Meat Loaf
Emma always tucked a hard cooked egg in the middle of her meat loaf; Lottie
used a kosher hot dog. Here is Emma’s recipe; the filling is up to you.
2 lbs. ground chuck
1 medium onion, chopped
1 egg, beaten
peanut oil
5 or 8 saltine crackers
1 beef bullion cube
Sauté onion in peanut oil until golden brown. Drain on paper
towel. Crush crackers and sift. Stir sifted crackers into beaten egg
and add to the meat along with the onion. Mix thoroughly. Shape
and place in meat loaf pan lined with foil. Bake in hot oven at 450*
until brown- about ½ hour. Lower temperature to 350* and continue
to bake for an hour, basting with the bullion cube dissolved in boiling water
every 10 minutes or so. Serves 4-6
