Sardines on Toast
4 small cans of skinless and boneless sardines
½ small onion, chopped
½ stick of butter or olive oil
dash of garlic
dash of pepper
juice of ½ lemon
4 slices white bread
sprigs of parsley
Melt the butter or oil in a medium frying pan. Add garlic and pepper. Sauté
the onion until soft, but not brown. Add the sardines and warm them in the
butter, turning gently so as not to break them. Toast the bread. Place
sardines on toast. Add lemon juice to butter and pour over sardines.
Decorate with parsley. Serve with lemon wedges on the side. Serves
