Salmon Croquettes or Loaf
1 can (16 oz.) salmon, drained
3 large eggs
2 T matzo meal
2 T sour cream
1 small diced onion
Mix all ingredients and form into patties. Fry in oil just long enough
to crisp both sides. Slip into oven at 350* for 20 minutes. If you
substitute 1 cup of corn flakes for the matzo meal, use ½ pint of sour
cream instead of just 2 T, and separate your eggs and beat the egg whites
until stiff and fold them in, you can form a salmon loaf in a greased loaf
pan and bake 45 minutes.
