Mock Lobster
4 lbs. halibut or haddock fillets
1 small bunch of celery, chopped
1 small onion
1½ bottles of chili sauce
1 tsp. salt
1 tsp. pepper
1 ¼ cup of mayonnaise
juice of one lemon
1 T sugar
Place onion, salt and sugar in a pot of water. Bring to a boil. Place
fish in water and simmer for 10 minutes. Drain and cool fish. Add
other ingredients, mixing well. Taste and adjust seasoning. Mold
overnight and serve with garnishes. Serves 8-10. Also can be used
as an appetizer.
