Emma’s Fried Flounder
2 lbs. flounder fillets
2 eggs, well beaten
juice of one lemon
¼ tsp. salt
matzo meal
vegetable oil, preferably peanut oil
Mix together lemon juice, salt and eggs and place fish in them. Let
sit for 15 minutes. Heat oil until hot. Dip each fillet in matzo
meal until completely covered. Place in hot oil. Do not crowd. Brown
nicely on both sides. Do not over cook. Drain on paper towels. Serve
with tartar sauce. Serves 4-6
