Emma’s Apple Torte
1 cup sugar
4 T Butter
1 egg
1 tsp. baking soda
1 cup flour
1 tsp. cinnamon
¼ tsp. nutmeg
1 cup apples, finely chopped
½ cup walnuts, finely chopped
1 tsp. vanilla
¼ cup raisins (optional)
Cream sugar and butter well. Add egg. Beat well. Sift together
dry ingredients and add to first mixture. Add apples, nuts, raisins
and vanilla. Bake in large buttered pie plate 35 to 40 minutes at 350º. Before
removing from oven, touch middle of cake to see if it is dry. If not,
bake a little longer. Moist apples or too many apples will make the
cake moist. Serve with ice cream, whipped cream or hard sauce.
