Eingemachts - Beet Preserves
¾ cups water
2 lbs. fresh beets, peeled and diced
2 lbs. sugar
1 T ginger
3 lemons, sliced
1 cup almonds, chopped
Place all ingredients over low heat for 1 hour, stirring occasionally. When
it thickens, remove from heat and let cool overnight. Can be sealed
in jelly glasses.
